Here is some interesting international news from India related to research on low carbohydrate rice varieties to address the increasing diabetes epidemic.  There are more than 35 million people with diabetes in India and rice consumption contributes to the high carbohydrate intake in a nation where 80% of the population eat rice as part of their daily diet.  University researchers and private industry are collaborating to develop rice variations that are diabetic-friendly – meaning low carbohydrate strains.  The first low-carb rice variety will be released in April to the Godavari region in southern India.
